And Happy 150th Birthday Canada!

I hope you all are enjoying your holiday weekend! We are having everyone over for the holiday which means 21 people total. That’s a lot of people in one backyard! I know it can be a stressful time having friends and family come over so I wanted to share some of my top party planning tips.

First things first

Delegate

Any good leader knows that in order to get stuff done you need to delegate. And honey you are a good leader. My favorite way to delegate is to organize a pot luck. For instance this year we are hosting so we are providing hamburger patties and hotdogs. I then made a list of everything else we need and sent it out to guest list. On the list are things like condiments, buns, drinks, desserts, plates, and utensils. Once these basics are covered people can just bring whatever they want. This also helps keep your budget and sanity in check.

Part A

You might be thinking, Chelsea it’s the day before the 4th, how the hell do I plan this late in the game, but I promise you can do it! I like to break things down into components, i.e. cleaning, decorating, and prep. Put these and whatever other titles are appropriate at the top of a sheet of paper. Then write every single thing you want/need to get done under each one. Don’t worry if the list seems daunting, part B will take care of that!

Part B

Now I need you to either get 3 different colored markers (like these sharpies) or decide on 3 different symbols (1,2,3 work just fine). Your categories are going to be need to do, want to do, and can be skipped. Now just go through your list and mark everything with a category. If it is something that needs to be done the night before, mark it, I like to use NB (night before) for this.

Execute!

Now work through your list starting with the things you need to do. Turn on some music and work it out! you will see that the need to do list isn’t as long as you originally thought. Focus on areas guests will see and shut the doors on the rest (I give you permission)! Stick to simple decorations and just put the focus on the food and people. I like to make sure what people will see on their way to the bathroom is cleaned up. Other than that there isn’t a whole lot to do. Congratulations you are done! Now go..

Hello again

Me!
Me on mother’s day this year.

Hello friends! (I hope I can call you that, I think I can lol) I have decided that I should share some more about myself. My original about me section is kind of blah and depressing. I wrote that when depression was still a big part of my life. Well lately the monster has retreated into its cave. I still have the occasional iffy day but nowhere near as bad as they used to be. Depression is a part of my life but it is not my whole life.

So onto the real story, me! I am Chelsea, I am a breastfeeding, baby led weaning, cloth diapering, vaccinating, stay at home mom of Skyla. Skyla is 20 months old and took 2 years of trying to get here. She is stubborn right from her birth when she was forcibly evicted 9 days past her due date. I was on Pitocin for 32 hours and she wouldn’t come out so I had a c section and the stinker was sunny side up. Since that day she was be willful and strong, but I wouldn’t change it for anything.

I know the site says babies and I only have one baby so I need to remedy that. I would like to have another baby soon. But being 20 months postpartum and still not having my period makes it kind of difficult. We are leaving it up to God at this point. Last time we went through fertility treatment and it was very, very stressful. Plus when we finally did get pregnant it took away the fun of surprising our family. They all knew when we would be able to test so it was impossible to hide it from them. I actually came up with the name one day when we were watching our niece and nephew, it was so difficult but so amazing.

My husband Phil and I have been together for 6 years now, and for 4 of those we have been married. Like most couples we have our problems, but we also have our love and understanding of each other. We support each other’s dreams and ambitions. We also fight like cats and dogs but he is my best friend. Other than my other best friend, Amy, who I’ve known for 22 years. Amy lives in my home town of Cottage Grove, MN. Phil and I live about 5 hours away in North Dakota. I miss my friend.

I love to do crafts, much to the dismay of my husband. “Why buy it made when I can spend twice as much and do it myself?!” is the running joke in our household. I also love to cook. I like to take random things we have in our cupboard and make a meal that tastes good. I am nowhere near being a chef but I still love to be in the kitchen. Except for dishes, dishes can burn in hell. I like to garden but I do not like pulling weeds. We have creeping Charlie in our garden and it is very annoying. I also like to garage sale, finding deals is a high for me. If I think something is cool or unique or can be repurposed and the price is right you bet your sweet ass I am bringing it home with me. O I also swear, if you haven’t figured that out yet. Sorry mom.

Let’s see, my favorite colors are blue, green, and purple. Favorite food categories are Mexican and Asian. If I could have both of those every day I would be a happy camper. Speaking of camping, I like to do it but I do not like bugs, or latrines. My pee mixing with another person’s pee freaks me out, and I always feel like something is going to bite my butt. My husband says I’m weird, I think I’m perfectly normal. Pffffttt ok I lied, I am not normal, but I’m not going to change so he can get over it. I prefer camping in a camper with a/c and a bathroom, and a lake I can swim in. Ok I like staying in lake cabins. I am not the biggest fan of camping. I do like fires though. Not like an arsonist. Campfires. With smores. I like food.

So I was recently over at my sister-in-law’s house and she had these gorgeous new pillows on her couch. I just had to know where she got them. Well of course she found them on Amazon. Where did spring go?

What. The. Actual. F**k. Ok who pissed off mother nature because it is snowing, April 26th and it is snowing. Not just a little flurry, the ground is literally covered in snow. I mean look at this crap.

Eww.

Last week it was in the 60’s and beautiful, now it is snowing for the second time this week. I had to turn the heat on in the house and my husband is using this to fuel his argument for moving somewhere warm. Don’t get me wrong, I love snow, just not in April. It is spring’s turn winter, you’re not wanted here! I need to clean and I like to have my windows open when I clean, it’s like the warm air gives me energy that I desperately need. Well I can’t really open the windows when its only 29 degrees outside. I need a solid 45 to open these windows (I am a North Dakota girl after all). Well I guess I better get cleaning anyway, lots to do and only a few days to do it. Anyone else struggle to get going when the weather is crappy?

I do have to say that even though the snow stinks there are still some beautiful parts, I guess it’s kind of like life in that way.

Cooking to Quiet the Mind

I mentioned in my last post about how cooking makes me feel happy, for me it is a huge de-stresser. So last night for our family dinner I decided to make homemade pizza. I even made the crust from scratch, mainly from necessity, but I did it! I found the recipe for the crust on allrecipes.com, I got to say it was pretty good. Next time I am definitely going to add some spices to the dough though. It had a really good texture but the taste was just a little blah. I also had only half the olive oil the recipe called for this time so I used half vegetable oil. That may have affected the taste a little bit but hey a girls gotta do what a girls gotta do. I swear we are always running out of something around here, be it olive oil or money lol. But anywho the dough turned out awesome, I mean look at that beauty!

Usually when I make dough (which may or may not come from a little box) it gets all over my dang hands when I try to roll it out. I don’t know about you but I hate when my hands get sticky, it drives me batty. This did not stick to my hands at all. I just slid it right off the dough hook and was so easy to roll out on the pizza stone (thank you little brother for the wedding present!). It was my first time using a pizza stone and I must say there is a bit of a learning curve. I am hoping to get a pizza peel soon so next time I can heat up the stone in the oven and then put the pizza on to get a crisper crust. This time I rolled out the pizza directly on the stone with some cornmeal to prevent it from sticking, it worked but it wasn’t ideal. Sure looked good though (at least in my opinion).

It was a hit with our family, my husband kept saying he wanted more. I will be making this again in the future and I think next time we will get a little more creative with the toppings (can you say veggies?!). It was also a hit with my soul to make this. Yeah that sounds a little hippy dippy but honestly when I am in the kitchen everything calms down. It is my favorite thing to do when I just can’t deal with life anymore. What is your thing that you do to calm your mind? Do you read? Draw? Scream? Sing? Exercise? Sexercise? Meditate? Pray? What is your thing?
